C's Oatmeal Sunflower Waffles

1/4 cup oat meal
1/4 cup raw sunflower seeds (shelled, duh!)
1 tbsp flax seed
1 tsp baking powder
1 egg
1/2 cup milk or water (plus or minus a little as needed for pouring consistency)

In a clean, dry blender, grind the oatmeal, baking powder, sunflower seeds, and flax seeds until it becomes a fine flour.
Add the milk or water and the egg and blend until it makes a uniform batter.

Be sure to coat the waffle iron with non-stick spray, since there is no oil in this recipe.

Pour into the waffle iron and cook until it stops steaming.

Serve with your favorite syrup and maybe some Smart Balance or other spread.

Variation:
Heat 1/2 cup frozen blueberries in the microwave for 1 minute.  Dump the hot berries on the waffle and cover with Knott's Blueberry Syrup and a dollop of Cool Whip or vanilla ice cream.  Yum!  I also like it with sliced strawberries and whipped cream.

This recipe makes about one waffle in my Belgian waffle maker.
